COURSE 1

Salad Lyonnaise
Bitter greens, bacon, shallots topped with a poached egg & warm bacon vinaigrette.
Pairing: 2022 Chateau Mont Redon Blanc Cotes du Rhone, Rhone Valley

COURSE 2

Coq au Reisling
Chicken thigh slow roasted in Reisling with mushroom, carrot, garlic, and herbs.
Pairing: 2020 Domaine Schlumberger Les Princes Abbes Riesling, Alsace

COURSE 3

Jambon Persille
Ham hock & trotters slowly cooked in a vegetable-herb-white wine broth, pressed into a mold and chilled. Served cold with crusty bread, cornichons, and house-made dijon.
Pairing: 2022 Frederic Magnien Croix-Violette, Cotes de Nuits, Burgundy

COURSE 4

Entrecote a la Bordelaise
Ribeye pan-seared in olive oil, topped with a red wine, shallot, & bone marrow butter glace.
Pairing: 2020 Chateau de Pez, Saint-Estephe, Bordeaux

Sticky Cakes
Canele vanilla & dark rum
Pairing: Chateau Bastor-Lamontagne 2018 Sauternes, Bordeaux
